Shredded Brussels Sprouts

If you don't usually go for Brussels sprouts whole or halved, you might like them better shredded. Especially if you like cabbage (after all, Brussels sprouts look just like little mini cabbages anyway). This method has a more pleasing texture and the addition of shallots and lemon juice really perks up the flavor. (Eh, who am I kidding, if you don't like Brussels sprouts just make yourself a salad.) 


SHREDDED BRUSSELS SPROUTS
Makes 4 servings

2 tablespoons butter or olive oil
2 teaspoons minced shallots
1 lb. Brussels sprouts, stems trimmed off and sliced thinly into shreds
2 teaspoons fresh lemon juice (or more to taste)
salt and freshly ground black pepper


1.      Heat butter in large skillet over medium-high heat. Add shallots and stir for 1 minute.
2.      Add shredded Brussels sprouts and sauté until crisp-tender, about 7-8 minutes.
3.      Stir in lemon juice. Season to taste with salt and pepper.

I LOVE Brussels sprouts! I have a great recipe for sprouts shredded and sauteed with pecans and dried cranberries. It's so yummy. Your recipe seems so simple and elegant. Much easier to make on a week night. Yum!
