Sweet Potato Fries (baked)

It's true, frying equals fun. But you won't miss the big pot of oil with these tasty baked sweet potato fries. Maybe some day I'll tell you the story about one of the first times I made french fries (this is going back about 22 years) and ended up being visited by some big, burly (very friendly) firemen. I guess I just did.
SWEET POTATO FRIES (BAKED)

sweet potatoes (1 per 2 people, depending on the size)
extra virgin olive oil
sea salt
freshly ground black pepper
paprika


1.      Preheat oven to 450º F. Cut sweet potato into sticks about 1/2-inch thick.
2.      Spread sweet potato sticks on a baking sheet in a single layer and drizzle with olive oil (just enough to evenly coat the fries, there shouldn’t be a pool of oil).  Sprinkle with salt, pepper and paprika to taste.
3.      Bake for about 25 minutes, turning occasionally, until dark and crispy. (If you want your fries very crispy, bake until very dark--they don't look as nice, but they taste great.)

These were delicious but they were not crispy. Did I cook them too long or not long enough. Again, they were really good but if you picked them up they drooped.

If you want them nice & crispy, you do have to cook them until there are unslightly dark spots on them (it isn't pretty, but it tastes good)! Maybe I'll update the post with that tip. Thanks Becky!
